The industry responds to a desperate need for convenience for time-poor, working parents. But despite the sector's growing popularity, little is known about the sustainability of the industry. In the lentil and vegetable bake I dig out for dinner, for example, organic broccoli, parsnip and green lentils are listed as the main ingredients. In the UK, the organic label means at least 95% of the product's agricultural ingredients are organic, and have strict regulations about the use of pesticides.
